We try to celebrate holidays with special foods and St. Patrick's Day is no different. We are a long way from the green beer that we used to celebrate with, so this year we are opting for green muffins. (Don't tell your kiddos, but these are really healthy, too!) Makes 18 muffins
Ingredients:
2 Cups whole wheat flour
1 1/2 teaspoon cinnamon
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 Cup butter, melted
3/4 Cup milk
1/2 cup honey
1-2 large bananas
6 ounces raw baby spinach
1 large egg
1 teaspoon vanilla
raisins (optional)
cinnamon sugar (optional)
Preheat oven to 350. Grease or line muffin pans
In a large bowl, mix the dry ingredients. Set aside.
Mix all wet ingredients together in a food processor or blender.
Pour wet mixture into dry mixture bowl. Stir to combine. Add in optional raisins if desired
Pour into prepared muffin tins. Sprinkle with cinnamon sugar on top if desired.
Bake 20-22 minutes or until a toothpick inserted comes out clean.
Cool in the pan for 5 minutes. Move to wire rack to completely cool.
The kiddos can't get enough of them and I love that they are eating spinach!
